O CIFP Carlos Oroza de Pontevedra e o Instituto Galego de Formación en Acuicultura da Illa de Arousa veñen de presentar o manual didáctico ‘Ciencia e gastronomía dos produtos da acuicultura de Galicia’, no que colaborou o Consello Regulador da DOP Mexillón de Galicia.
A obra, destinada ao alumnado dos centros de formación mencionados, inclúe fichas con información sobre o cultivo, a comercialización e o valor nutricional de diferentes produtos como o rodaballo, o linguado, a troita, o mexillón e as algas wakame e kombu. Asemade, tambén inclúe receitas.
